With cheese consumption on the rise nationwide according to the Wisconsin Milk Marketing Board, a Kewaunee County farm is using his operation as an outlet for people to learn more about where their food comes from. Pagel’s Ponderosa Dairy in Kewaunee began producing cheese in its on-site plant just over a year ago with milk that comes straight from the parlor next door. In addition to the beef cattle his farm raises for a variety of different products, owner John Pagel says the production of their farmstead cheese shows what it takes to go from the cows to the countertop.
According to the USDA, farmstead cheese is growing faster than any other category in Wisconsin, accounting for more than 20 percent of the state’s production.
